On any given sunday, chef @sotaatsumi kills it with this thinner-than-crisp oven hot brioche bun, server perfectly split in two. Today filled with warm white cabbage and layers of cold foie gras. Aaargh I just Love it so much!!! There is a lot of fine technique going on here that I can't quite figure out, perhaps I must learn japanese? par mattias.kroon
