Wonton de Boudin Noir Frits, sweet chili sauce (Fried Boudin Noir Wonton, sweet chili sauce). @ Le Servan, Paris. The menu here was sweet and short with about 3-5 items in each categories, good for sharing or solo dining. The dishes comprised of French ingredients sparked with international flavors, a lot of which tangy, zesty and spicy, probably due to Chef Tatiana's Filippino heritage. It reminded me a bit of food in Manhattan actually, but with French meat and produces and lots of offals (yay!), and most importantly, the execution was magnificent. Like this boudin noir wontons (small portion for me as solo diner) which was so french (for the main ingredient) and so not french! (Wonton, and chili sauce). These morsels were already spicy and full of kick, and the sweet chili sauce had REAL heat unlike 90% of the so-called spicy food in Europe! The tiny touch of lemon zest on the wonton showed the kind of attention of details the chef learnt from the big culinary institutes. par little_meg_siu_meg
