If you remember in my last trip to Paris, I wrote a post, a little "rant" of mine, about how the modern French / European restaurants are lacking sparks and excitement due to their almost identical menus, dishes, flavors and formats, and many seem to be just a replicate of each other. I had much better luck this time, with Les Deserteurs being one "trahipster" place with food that could please young and traditionalists and more vibrant flavors. Putting Japanese French restaurants aside (they are a genre of their own, IMO), another modern French restaurant in Paris that was able to differentiate itself from others was Le Servan. Headed by female Chef Tatiana Levha, formerly at L’Arpège and L’Astrance, the food here bares no similarity to those at the two mega-power institutions, nor does it resemble anything like Septime owned by her husband Chef Bertrand Grébaut. With her sister Katia running the front house, this bistro excited me with its distinct flavors and style. par little_meg_siu_meg
